Add curry powder, coriander, turmeric, and salt and pepper to the pot, then stir in fire-roasted tomatoes, coconut milk and water. Close the lid and cook on manual pressure for 10 minutes, then do a natural or quick release of the remaining pressure. Serve over rice or quinoa, and top with fresh cilantro for an easy, soul-satisfying one-pot meal!

Instant Pot Chicken Tortilla Soup

This healthy soup is packed with chicken, corn, black beans and spices and can be made in less than 30 minutes! Plus, this easy Instant Pot recipe is dairy-free (just omit the toppings that include dairy such as shredded cheese and sour cream).

Toss all ingredients into your Instant Pot and turn on the manual setting for 15 minutes. After the timer is done, allow pressure to naturally release for about 10-15 minutes. This is much safer than using a quick release because you’re less likely to get tough chicken or hot liquid spewing everywhere.

Once the soup is cool enough to handle, shred chicken with two forks and stir into bowls. Garnish with tortilla strips, shredded Mexican cheese and fresh cilantro. Serve with a squeeze of lime.
